Good For You Blueberry French Toast

- 2 cups skim milk shopping list
- 1 1/2 cups egg substitute or 3 large eggs, slightly beaten shopping list
- 1 t ground cinnamon shopping list
- 2 t vanilla shopping list
- 12 slices bread shopping list
- 3/4 cups fresh or frozen blueberries shopping list
- 2 T powdered sugar shopping list
How to make it
- Preheat oven to 400 degrees
- Grease a baking pan large enough to hold 6 slices bread in a single layer
- Whisk milk, eggs, cinnamon and vanilla in bowl
- Dip each 6 pieces of bread in mixture and coat each side before placing in the prepared pan
- Spread blueberries over the bread
- Dip the remaining 6 slices of bread and arrange over the berries
- Cover dish with foil and bake 20 minutes
- Uncover dish and bake until the top is golden
- Sprinkle with powdered sugar
- Cut into six servings
- Per serving: 235 calories and 2 g fat
