Honey Baked Chicken

- 3 pound broiler chicken skinned shopping list
- 3/4 cup shredded yellow squash shopping list
- 3/4 cup shredded zucchini shopping list
- 1/2 cup finely chopped onion shopping list
- 1/2 cup finely chopped celery shopping list
- 1-1/4 cup toasted whole wheat bread crumbs shopping list
- 1 clove garlic crushed shopping list
- 1 egg beaten shopping list
- 1/4 cup chopped pecans shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 3 tablespoons unsweetened apple juice shopping list
- 2 tablespoons honey shopping list
How to make it
- Discard giblets and neck of chicken then rinse chicken under cold running water and pat dry. Set aside. Coat a large nonstick skillet with nonstick cooking spray then place over medium high heat until hot. Add yellow squash, zucchini, onion, celery and garlic then sauté until tender-crisp and drain. Combine vegetable mixture, bread crumbs, egg, pecans, salt and pepper in a medium bowl and stir well. Place chicken breast side up on a rack in a roasting pan that has been coated with nonstick cooking spray. Stuff lightly with dressing mixture. Truss chicken or put ball of foil in opening. Combine apple juice and honey stirring well then brush chicken with half of apple juice honey mixture and bake at 350 for 2 hours. Baste occasionally with remaining apple honey mixture.
