Ingredients
  • 12 medium fresh sole fillets
  • Salt and pepper
  • Flour
  • 4 Tbsp butter
  • 4 oz Grand Marnier or Orange Curacao liqueur
  • 2 cups whipping cream
  • Sliced toasted almonds for garnish

Directions
  1. Season fillets lightly with salt and pepper and dredge them in flour.
  2. Melt butter in a large skillet and saute the fillets for about 3 minutes on each side. Carefully remove from skillet and hold on a platter in a warm oven.
  3. Add Grand Marnier and whipping cream to skillet and quickly bring to a boil; cook until reduced to about half the volume, about 10 minutes.
  4. Serve fillets over rice drowned in the sauce. Garnish with toasted almonds.
  5. *Variation: great with scalloped potatoes too!

Fantastic! Loved it! I served it to a table of 6 tonight...everyone loved it. One thing I did add to the butter was lots of crushed garlic...mostly because that's just a habit of mine. I also served it on a bed of mixed wild rice (including Black Japonica) for colour, and pan seared zuchini medallions. I've been using Grand Marnier & cracked pepper with Jumbo shrimp for almost 20 yrs now...it was fantastic to figure out how to use it elsewhere! Oh, one more thing...I forgot the Almonds! :( I can't believe I did that! Next time for sure...it would have made a big difference, I'm sure. Thank you!

Tried this one tonight. My husband and I loved it. The sauce was great (added some salt and fresh cracked black pepper). Served with Almond Rice Pilaf. Yum!
