Raspberry And Peach Cake Recipe
A nice summery light fruit cake. Good with a dollop of Cornish clotted cream. ;)

Ingredients
  • 175g Butter
  • 175g Golden caster sugar
  • 3 eggs
  • 225g Self-raising flour
  • 1tsp Baking powder
  • Grated rind 1 orange
  • 4tbsp reduced-fat creme fraiche
  • 1 firm peach
  • 100g Raspberries

Directions
  1. Preheat oven to 180'c/160'c fan/Gas 4.
  2. Line the base of a 9in/27cm round cake tin with greaseproof paper.
  3. place the butter, sugar,eggs, flour, baking powder, orange rind and creme fraiche into a large mixing bowl and beat until smooth.
  4. Spread the mixture in the cake tin. Remove the stone from the peach and cut into chunks, then scatter on top of the cake with the raspberries.
  5. Bake for 40-50 minutes until golden and firm to the touch. Turn out when cool
  6. ENJOY! :).

I love the combination of peaches and raspberries, I'm sure it's very pretty when all done as well.


This does sound lovely, indeed. The fruit must impart a very pretty color to this dessert, too.
