Raspberry Walnut Bars

- 1 3/4 cup flour divided shopping list
- 3/4 cup unsalted butter, softened shopping list
- 1 1/3 cups packed brown sugar shopping list
- 1/2 cup seedles raspberry preserves shopping list
- 2 eggs fork beaten shopping list
- 1/4 tsp salt shopping list
- 1 tsp baking powder shopping list
- 1/2 cup walnuts,coarsely chopped shopping list
- powder sugar dusting ( optional ) shopping list
How to make it
- Butter a 9 or 10 inch square pan
- Mix 1 1/2 cup flour,1/3 cup brown sugar and butter in a mixer at medium speed just to combine ( it will look kind of crumbly.)
- Do not cream mixture.
- Press mixture this in the bottom of the pan
- Bake 18 to 20 minutes at 350F until set and light browned
- Remove pan from oven and carefully spread on the preserves
- I found I had to dollop the preserves and spread carefully with the back of a spoon
- Let the preserves warm up a bit on the warm crust and then carefully spread with the back of spoon or spatula
- Mix the remaining 1/4 cup flour, 1 cup brown sugar, salt, baking powder and eggs until smooth
- Carefully spread this over the preserves, using the back of a spoon or even tilt pan a bit to let is spread evenly
- Then sprinkle evenly with the chopped nuts
- Return to the oven
- Bake for another 18 to 20 minutes until set and golden
- Remove to rack to cool completely
- Sprinkle with powder sugar if desired
- Chill the bars till quite cold for best cutting.
- Then let them come up to room temperature as I think they taste best that way after being cut although they are much firmer when cold
