How to make it

  • Preheat oven to 350 F
  • Preparation:
  • Lightly coat baking pan with shortening
  • In large bowl, beat eggs, mayonnaise, cheese and spices.
  • Put bread crumbs into a separate bowl or plastic bag.
  • Dip chicken pieces into the egg mixture and then into bread crumbs.
  • Place chicken in pan, top each piece with a small amount of shortening.
  • Bake for 30 mins., turn pieces over carefully and bake for another 30 minutes. Drain on paper towels. Delicious hot or cold!

    Thanks Keni!!! I've been making it for yrs. Only thing is...I'm not sure how people will react to 'shortening'. I don't think the health nuts would like it. lol I don't use butter, cause butter burns. I have used Olive Oil, but I keep going back to the shortening. I just recently started using mayonnaise. I tried it only because one day, I didn't have enough eggs in the house. So I figured mayo has eggs. Well lo and behold...it made the chicken even more moist and tender! As for marketing? Shoulda, Woulda, Coulda, but didn't. :( Now I'm getting too old.

    Wow, this is baked? And skinless?...you should market this, if so, cus it sure looks fried with a crispy skin...dieters would pay a premium for this! :)
