Smoked Paprika Roasted Salmon With Wilted Spinach

- 1/4 cup orange juice shopping list
- 2 tbls. plus 1 tsp. olive oil, divided shopping list
- 2 tsp. thyme leaves, divided shopping list
- 4 salmon fillets shopping list
- 1 tbls. brown sugar shopping list
- 1 tbls. paprika shopping list
- 2 tsp. cinnamon shopping list
- 1 tsp. grated orange peel shopping list
- 1/2 tsp. sea salt shopping list
- 1 bag spinach leaves shopping list
How to make it
- Mix orange juice, 2 tbls. of the olive oil, and 1 tsp. of the thyme in a small bowl. Place Salmon in a glass dish. Add marinade and turn to coat well. Cover and refrigerate for 30 minutes or longer for extra flavor.
- Mix sugar, paprika, cinnamon, orange peel, remaining teaspoon thyme, and sea salt in small bowl. Remove salmon from marinade. Line a pan with foil and spray with Pam. Place salmon on top of foil. Discard remaining marinade. Rub top of salmon evenly with paprika mixture.
- Roast salmon in preheated 400 degree oven 10-15 minutes, or until fish flakes easily with a fork. Meanwhile, heat remaining 1 tsp. oil in a large skillet on medium heat. Add spinach. Cook and stir 1 minute or until wilted.
- Serve salmon on bed of spinach.

This was really delicious. I liked the little bit of the taste of the cinnamon. I didn't have any orange peel but I made it exactly as written except for that. Added my picture. Thanks for a great dinner! A bit more in the IMI thread here
