Basic Berry Pie

- 6 cups berries(fresh or thawed and drained, frozen) shopping list
- 3/4-1 cup sugar, depending on sweetness preference and berries used shopping list
- 1/4 cup cornstarch or 1T arrowroot(this is what I use) shopping list
- dash of fresh nutmeg, ground shopping list
- 2t fresh lemon juice shopping list
- 1t lemon zest shopping list
- 2T honey shopping list
- 2T butter, melted shopping list
- 1 small egg, beaten shopping list
- 2T raw sugar(I used my own vanilla sugar) shopping list
- Double pastry, either homemade or frozen. shopping list
How to make it
- Add berries, sugar, cornstarch, nutmeg, lemon juice and zest to large glass bowl. Toss and gently stir to combine well.
- Put berry mixture in bottom crust.
- Combine butter and honey and drizzle over berry mixture.
- Add top crust. You can get all fancy with this, or leave it simple, but you'll need to at least slit this crust to let air escape. Pie crust is my nemesis, so I keep it simple. I use my apple corer for the middle then make a couple slits around that. See Photo
- Brush lightly with beaten egg.
- Bake at 450 for 10 minutes then sprinkle with sugar and lower temp to 350. Continue to bake about 30 more minutes until crust is golden brown and filling is bubbly.
- Let rest a few minutes to allow filling to set.
- Serve with vanilla ice cream, if desired :)
