Thai Dressed Grilled Salmon with Jicama Slaw

For Salmon
- 6 4oz salmon fillets shopping list
- 4T butter shopping list
- 3 cloves garlic, minced shopping list
- juice from 1/2 lemon shopping list
- juice from 1 lime shopping list
For Jicama apple Slaw
- 1 large jicama, peeled and julienned shopping list
- 2 medium apples, julienned or shredded(I didn't peel them) shopping list
- 1 large or 2 small bell peppers, diced shopping list
- 1 large onion sliced very thin shopping list
- juice from 1 lime shopping list
- 2t lime zest shopping list
For Dressing/Dipping Sauce
- juice from 1 limes shopping list
- juice from 1 lemon shopping list
- 1/4 cup Chinese Hot Mustard(or sub spicy brown or similar) shopping list
- 2T Thai Chili Sauce(hot or mild or sweet, to taste) shopping list
- 2T honey shopping list
- 2 cloves garlic, minced shopping list
- 2t lemongrass shopping list
- 1 shallot, grated shopping list
- 2t Worcestershire sauce(can sub soy sauce, if desired) shopping list
- 2t rice vinegar shopping list
- 1/4-1t red pepper flakes, to taste shopping list
- 1/4 cup salad quality olive oil shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- 1/4 cup fresh cilantro, chopped shopping list
- 2T sesame seeds(toasted, if desired) shopping list
How to make it
For Salad
- Combine jicama, apples, onions, and the juice of 1 lime
- Let rest in fridge while preparing the rest of the meal.
For Salmon
- Melt butter and stir in lemon and lime juices and garlic.
- Brush over one side of the salmon.
- Let rest while preparing dressing/dipping sauce.
For Dressing/Dipping Sauce
- Whisk all ingredients except oil and salt and pepper in medium glass bowl.
- Slowly add oil, a few drops at a time, until emulsifying begins, then you can add the rest a lil faster, whisking constantly.
To Finish Meal
- Combine jicama mixture with HALF of the dressing,cilantro, sesame seeds and toss well.
- Grill(or broil) salmon, starting with buttered side down. Brush remaining butter over other sides of the fillets before flipping, once, until salmon flakes.
- Serve salmon fillets with slaw on the side and with the rest of the sauce as a dipping sauce.
