How to make it

  • Melt butter in large saucepan
  • Add carrots, potatoes and onion and cook, stirring occasionally for 10 minutes Add salt, pepper and red pepper flakes
  • Add beer and heat to boil, stirring all the while
  • Add chicken stock and heat to boil
  • Cook until potatoes and carrots are cooked
  • Using blender or immersion blender, blend to suit your taste. (I like a chunky soup)
  • Return to saucepan
  • Under low heat, slowly add cheese and ham
  • Stir until cheese is melted
