Ham And Cheddar Ale Soup

- 2 tbls. butter shopping list
- 3 carrots, peeled and chopped shopping list
- 5 potatoes, peeled,cut into large pieces shopping list
- 1 onion, chopped shopping list
- salt, pepper and red pepper flakes to taste shopping list
- 1 12 oz. beer shopping list
- 1 box of chicken stock, 32 oz. shopping list
- 2 cups cheddar cheese, grated shopping list
- 1 cup cooked ham, cut into bite size pieces shopping list
How to make it
- Melt butter in large saucepan
- Add carrots, potatoes and onion and cook, stirring occasionally for 10 minutes Add salt, pepper and red pepper flakes
- Add beer and heat to boil, stirring all the while
- Add chicken stock and heat to boil
- Cook until potatoes and carrots are cooked
- Using blender or immersion blender, blend to suit your taste. (I like a chunky soup)
- Return to saucepan
- Under low heat, slowly add cheese and ham
- Stir until cheese is melted
