How to make it

  • Rinse Tilapia lightly in cold water, pat dry with paper towels and let them rest on fresh paper towels while you prepare the other ingredients.
  • Salt & pepper both sides of each filet.
  • In a dredging dish (13x9) :Then :
  • Combine:
  • 1 cup plain yogurt, add a couple good dashes of hot sauce, grate lemon rind and cut lemon in half adding the juice from 1/2 of lemon & sour cream. Whisk to combine.
  • Dip each fish filet in yogurt mixture. Flip and do the other side.
  • In seperate dredging pan:
  • 2 cups Panko Crumbs and 1 tsp Italian spices-mix to combine.
  • You can add finely chopped fresh mint & lemon verbena if you have it at this time to the crumbs.
  • Dip fish in panko crumbs gently pushing on each fiet so the crumbs will stick to the fish. Do this with all of the filets.
  • Place in baking pan (spray some non stick for easy clean up)
  • Place in 350 degree oven (middle rack) for 20-25 minutes.
  • Enjoy! This is wonderful with a Cranberry and Walnut Quinoa and Tossed Green Salad. Very satisfying healthy flavor packed meal!

    This sounds excellent - I love tilapia. I'm interested in how you do Cranberry and Walnut Quinoa. Generally I have just made Quinoa with saffron.
