How to make it

  • Heat oil in large heavy-based pan over med heat. Add onion and cook,stirring for 5 to 6 mins until soft. Add cumin,coriander,tumeric,cayenne,garlic and ginger and cook ,stirring 2 mins.more Add the chicken and increase heat to med-high. Cook,stirring often until chicken is browned,about 5 mins.
  • Stir in tomatoes and salt and bring to simmering point. Reduce heat to low,cover the pan and simmer gently for 15 mins. Add brown sugar,lime juice and baby spinach and stir till spinach has just wilted. Remove from heat,sprinkle with chopped coriander and serve with steamed rice.
