Scallops With Chourico

- 1/2 lb Portuguese chourico sausage shopping list
- 1 lb small scallops shopping list
- 1/2 lemon, juice only shopping list
- 2 tbsp green onion, chopped shopping list
- fresh parsley to garnish shopping list
How to make it
- Slice chourico into 1 inch rounds.
- Place a pan over medium heat and fry chourico without adding any oil.
- Remove chourico and transfer to a bowl. In the same pan, fry the scallops in the oil left by the chourico for about a minute on each side.
- Return chourico to the pan, add lemon juice and green onion, fry another 2 minutes.
- To serve; place chourico and scallops onto a serving dish (or 4 individual ones) and sprinkle with fresh chopped parsley
