How to make it

  • Slice chourico into 1 inch rounds.
  • Place a pan over medium heat and fry chourico without adding any oil.
  • Remove chourico and transfer to a bowl. In the same pan, fry the scallops in the oil left by the chourico for about a minute on each side.
  • Return chourico to the pan, add lemon juice and green onion, fry another 2 minutes.
  • To serve; place chourico and scallops onto a serving dish (or 4 individual ones) and sprinkle with fresh chopped parsley
