Cornish Game Hens With Glazed Onions Recipe

Ingredients
  • 2 medium yellow onions
  • Boiling salted water
  • 4 small Cornish game hems
  • 1 teaspoon salt
  • 3 tablespoons melted butter
  • 1/3 cup brown sugar
  • 1/4 cup white wine
  • 1/2 teaspoon ground ginger
  • 1 ounce toasted almonds

Directions
  1. Peel onions and cut in halves crosswise.
  2. Place in skillet with 1 inch of boiling salted water.
  3. Cover and simmer 5 minute then drain and set aside.
  4. Sprinkle cavities of game hens with salt.
  5. Truss legs and wings then place breast side down on rack set in shallow baking pan.
  6. Brush with melted butter then roast at 400 for 30 minutes.
  7. Meanwhile combine butter, brown sugar, wine and ginger saucepan and bring to a boil.
  8. Remove from heat.
  9. Turn birds breast sides up.
  10. Place onions alongside.
  11. Spoon glaze over birds and onions.
  12. Reduce oven to 350 and bake for 30 minutes.
  13. Baste occasionally with glaze.
  14. To serve sprinkle onion halves with almonds then garnish with mint or parsley.
