- 3 Tbsp. butter, divided shopping list
- 4 4-oz. filet mignons shopping list
- 3 Tbsp. minced shallots shopping list
- 1/2 cup mushrooms, sliced shopping list
- 3/4 tsp. dried thyme shopping list
- 1/2 lbs lump crab meat shopping list
- 1/4 cup sweet sherry (cream sherry) shopping list
- 2 tsp. tomato paste shopping list
- 1/2 cup heavy cream shopping list
- 3 Tbsp. brandy shopping list
- salt and pepper shopping list
- Louisanna hot sauce shopping list
How to make it
- Melt 2 Tbsp. butter in large sautè pan over medium high heat
- Add filets and brown on all sides.
- When filets have reached desired doneness, remove from pan and set aside in warm oven
- Add remaining butter, shallots, mushrooms and thyme to pan. Sautè until shallots and mushrooms are softened.
- Add sherry, tomato paste, cream and optional brandy to ingredients in pan and blend well. Simmer for a couple of minutes.
- Gently incorporate crab meat and simmer until heated thoroughly.
- Adjust seasoning with salt, pepper and a dash of hot sauce.
- Remove Filets from oven and plate
- Gently spoon sauce over filets to serve
