Val's Caramel Apple Jam

- 1 lb. tart apples (Granny Smith work great) shopping list
- 1/2 cup raisins shopping list
- 1 cup water shopping list
- 5 Tbsp. lemon juice shopping list
- 1-1/2 teaspoons ground cinnamon shopping list
- 1/4 teaspoon ground ginger shopping list
- 1/8 teas. ground cloves shopping list
- 4-1/2 cups granulated sugar shopping list
- 1 cup packed light brown sugar shopping list
- 1/2 teaspoon butter shopping list
- 1 packet liquid pectin shopping list
How to make it
- Peel apples, core and finely chop enough to make 2 cups.
- Place all ingredients except pectin in a large kettle and stir while bringing mixture to a boil.
- Boil hard for 1 minute.
- Remove from heat and immediately stir in pectin.
- Bring to a full rolling boil and boil hard for 1 minute.
- Remove from heat and skim off foam.
- Ladle into clean hot jars leaving 1/2 inch head space.
- Seal and process for 10 minutes in a boiling water bath.
- Note: The apples will rise to the top so after the lids seal, turn the jars over a few times.
