Ingredients

How to make it

  • Chop onion and slice mushrooms
  • Thinly slice yams
  • Heat pan for about a minute
  • Add olive oil
  • Cook yams until tender and getting brown
  • Add tofu and brown
  • Add onions and mushrooms
  • Cook until onions are translucent and mushrooms are shrinking and browning
  • Stir in salt and pepper
  • Serve with pita, or over rice, or just eat straight!

    SUCCESS! I gave this four stars because I actually changed a lot in the recipe so I didn't want to give it five stars wen I really didn't try the exact recipe! I used my Tasty Tofu A Zesty Herb Marinade recipe for the tofu, left out the mushrooms but added some vegetables, fresh spinach and agurula! I know it sounds like I changed a lot but I really didn't. This was fantastic over brown rice.

    Really enjoyed this...and thought it was a delicious combo but for my taste did require a little extra seasoning. I both marinated the tofu in soy sauce before frying, and I sprinkled more on top of the finished stir fry when serving. Thanks for the post - it's a keeper!
