How to make it

  • 1. Place potatoes and water in the microwave cover and micro on high for 4 minutes or until tender and then drain.
  • 2. In a skillet, saute sausage and onion in oil until onion is tender. Add the potatoes and saute for 5-10 minutes longer or until the sausage and potatoes are lightly browned.
  • 3. In a bowl combine the brown sugar, vinegar, mustard, thyme and pepper and mix well and then stir into the skillet.
  • 4. Bring to a boil and then reduce heat, simmer uncovered for about 5 minutes or until heated through. Add the spinach and bacon and cook and stir until heated through.

    Was just looking at this recipe elsewhere and was going to try it! How's that for a coincidence... Only thing, it called for Kielbasa instead of Italian Sausage. Either way it looks great!
