Italian Sausage & Potato Skillet

- 1 pound potatoes shopping list
- 3 tablespoons water shopping list
- 1 pound of italian sausage cut into 1/4 inch slices shopping list
- 1/2 cup chopped onion shopping list
- 1 tablespoon olive oil shopping list
- 2 tablespoons brown sugar shopping list
- 2 tablespoons cider vinegar shopping list
- 1 tablespoon Dijon mustard shopping list
- 1/2 teaspoon dried thyme shopping list
- 1/4 teaspoon pepper shopping list
- 4 cups of fresh of frozen spinach shopping list
- 5 bacon strips, cooked and crumbled shopping list
How to make it
- 1. Place potatoes and water in the microwave cover and micro on high for 4 minutes or until tender and then drain.
- 2. In a skillet, saute sausage and onion in oil until onion is tender. Add the potatoes and saute for 5-10 minutes longer or until the sausage and potatoes are lightly browned.
- 3. In a bowl combine the brown sugar, vinegar, mustard, thyme and pepper and mix well and then stir into the skillet.
- 4. Bring to a boil and then reduce heat, simmer uncovered for about 5 minutes or until heated through. Add the spinach and bacon and cook and stir until heated through.
