How to make it

  • Preheat the oven to 180C.
  • Cut the sweet potatoes into large wedges. Peel the carrots and cut in half widthways, then into quarters lenthways.
  • Par boil the vegetables for about a minute (no longer!).
  • Drain the vegetables and mix witht he oil, seasonings and sugar. Toss all the ingredients together.
  • Bake for about 30 minutes or until the ends of the carrots start to go dark brown and crispy.
  • Serve immediately. Enjoy, comment and rate!

    I made these last night as a side dish to a baked ham and they were amazing. We didn't have any carrots, so I only made the sweet potatoes but my boyfriend said we will never have sweet potatoes any other way from now on!

    Thanks for your comments - especially your ideas about having more variety, Bru. How about including strips of capsicum peppers? Or chunks of pumpkin or butternut squash? I know what you mean about sugar being in everything but I just love a tiny bit on roasted carrots!!!

    Great tasty idea but I mixed some other vegs with it for more variety-white potato, parsnips. Anyone have any ideas for what else could be added?? I made it without the sugar; we all eat WAY too much already - it's in everything. Since I have cut back on sugars I notice the vegs taste sweeter all by themselves.

    I love roasted vegetables, but have never tried the carrot/sweet potato combo before. And I love brown sugar...so this recipe must be a good one for me to make soon! Thanks for the post.
