Beets With Marmalade-ginger Glaze

- 1 can (14 1/2 oz.) sliced beets OR about 2 cups fresh shopping list
- 1/3 cup marmalade shopping list
- 2 tablespoons lemon juice shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons beet liquid shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1/8 teaspoon ground ginger or 1 tsp fresh grated ginger shopping list
How to make it
- Drain beets, reserving liquid.
- In a saucepan over low heat, stirring constantly, melt marmalade with lemon juice, butter, and beet liquid.
- Blend in seasonings then add beets. Simmer uncovered for at least 5 minutes, stirring occasionally to glaze all beets. Add a cornstarch slurry for a thicker glaze.
