Ingredients

How to make it

  • Cut the ham into small chunks, and then mince in a food processor to make about 4 cups of minced ham, and place in a large bowl
  • Add the relish
  • Cut up the onion, and mince in the food processor, and add to the bowl
  • Cut up the celery, and same thing, mince and add to the bowl
  • Tosse the eggs in the processor, and mash 'em up good, and add to the bowl
  • Add mayo, and dijon, and mix thoroughly

    Just finished making this. Came out perfectly. I did 1/2 the amount but the ingredients worked just fine being halved. I did take a small liberty and tossed in some fresh parsley that needed to be loved. Thanks again for a terrific post I have added a picture. I did forget to resize it before uploading so if you delete it and let me know I'll post up a smaller size.

    Fixing this up today. My brother sent us a Harringtons Virgina Ham at Christmas. Sliced it up for sandwiches tomorrow at the SuperBowl gather but there were all those tastey odds and ends just yearning to be ham salad.
