Chicken Cacciatore

- chicken pieces (drumsticks & thighs are good) shopping list
- flour for coating the chicken shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- vegetable oil for the pan shopping list
- 1 onion, chopped shopping list
- 3 cloves garlic, chopped shopping list
- Large can of whole tomatoes with the juice shopping list
- 1/2 teaspoon oregano shopping list
- 1/2 teaspoon red pepper flakes shopping list
- 1/2 cup white wine OR chicken broth shopping list
- 6-8 ounces mushrooms, sliced shopping list
- 1 green pepper, sliced shopping list
How to make it
- Coat the chicken pieces with the flour, salt, & pepper and brown on all sides in the oil. Remove the chicken pieces when done.
- Add the onion, garlic, mushrooms, & green pepper to the pan and saute until the onion is slightly browned.
- Break up the tomatoes and add them with the juice to the pan. Add the oregano, wine, & red pepper flakes to the pan and bring to a boil.
- Lower the heat and add back the chicken to the pan. Simmer, half-covered, for about 1 hour.
