How to make it

  • Clean the zucchinis and eggplants and cut them to pieces.
  • (Optionally, you can saute the zucchinis and eggplants, but you will have to sprinkle them with salt and put them aside for about an hour, if you choose to do so).
  • Clean and peal the potatoes and then cut them to pieces.
  • Slice the onions, carrots, and tomatoes and place them with the zucchinis and eggplants inside a pan.
  • Add the tomato paste and mix with 2-3 glasses of water and the olive oil, and stir well.
  • Cut the Feta cheese in cubes and add it to the mixture.
  • Finally, add spearmint and stir the mixture lightly.
  • Cover the pan with silver foil and cook at 180 C (about 360 F) for about 50 minutes.
  • Then remove the foil carefully and cook for another 10 - 15 minutes.

    No, it isn't necessary to peel the eggplant. It adds to the flavor this way. ;-)
