- 1/2 kg eggplants shopping list
- 1/2 kg squashes (zucchinis) shopping list
- 3 - 4 potatoes shopping list
- 2 carrots shopping list
- 2 onions shopping list
- 3 tomatoes shopping list
- 1/2 kg feta cheese shopping list
- 1/2 cup of chopped spearmint shopping list
- 3 -4 tablespoon of tomato paste shopping list
- 1/2 cup of olive oil shopping list
How to make it
- Clean the zucchinis and eggplants and cut them to pieces.
- (Optionally, you can saute the zucchinis and eggplants, but you will have to sprinkle them with salt and put them aside for about an hour, if you choose to do so).
- Clean and peal the potatoes and then cut them to pieces.
- Slice the onions, carrots, and tomatoes and place them with the zucchinis and eggplants inside a pan.
- Add the tomato paste and mix with 2-3 glasses of water and the olive oil, and stir well.
- Cut the Feta cheese in cubes and add it to the mixture.
- Finally, add spearmint and stir the mixture lightly.
- Cover the pan with silver foil and cook at 180 C (about 360 F) for about 50 minutes.
- Then remove the foil carefully and cook for another 10 - 15 minutes.
