    A very flavorful veggie bake. No salt or pepper needed. A nice tang from the cheese.
    Used yellow squash. Did the optional saute on the squash and eggplant. Should have sauteed the carrot and potato too as they were slightly underdone.
    Used a stock pot instead of a casserole dish. It was iffy if it all would fit in a 10x15.
    Used dried mint. Don't think I could really taste the flavor.
    A half cup of olive oil seems like a lot at first blink but I didn't taste it.
    Instead of water I used tomato bouillon, 2 cups.

    It does seem like the potatoes and carrots would be done within an hour, but I guess I could see them needing a long time since there is so much stuff going on in that baking dish. That is interesting with the mint. Your pics look yummy :)
