Vanilla And Cardamom Glazed Beets

- 6 med-large red and golden beets (2lbs) shopping list
- 1/3 c orange juice and 1/2 tsp zest,finely grated shopping list
- 1-1/2 TB sherry vinegar shopping list
- 2 tsp lt. brown sugar shopping list
- 2 tsp unsalted butter shopping list
- 1/4 tsp ground cardamom shopping list
- 1/4 tsp vanilla shopping list
How to make it
- Set rack in muiddle position and heat oven to 400'
- Wash beets,wrap tightly in foil,place in roasting pan and cook till tender,about 1-1/2 hours.
- Un wrap beets and when cool,peel,cut into wedges and set aside.
- Meanwhile,in large skillet,combine orange juice,zest, vinegar and sugar. Over med heat,simmer, swirling occasionally,until reduced and syrupy,about 4 mins.
- Adjust heat to low,add butter,and swirl to blend. Add cardamom and vanilla,and swirl to combine.
- Add beets and salt and pepper to taste,and cook stirring constantly,until heated through,about 2 mins. Serve at once..
