  • saute in olive oil the green pepper onion carrots garlic add the curry powder
  • then cut breast up into small chunks put in pot with veggies brown
  • then add potatoes and chicken stock and coconut milk cook until a light boil then turn down heat and simmer for about 1 hour the longer it simmers the better it is!! This is so good and feeds many. I pour it over the cooked rice a very tasty meal..
