Curry Chicken And Potatoes

Recipe by 7monsters: Curry Chicken And Potatoes/saved
If this is supposed to be soup over rice it is spot on. If it is supposed to be a thick stew dolloped over rice, one needs to cut back on the liquid.
Very nice flavor. Recipe is nebulous on how to process the veggies. Size of the box of chicken stock is at issue here too.
I started out in a large saute pan and had to switch to a stock pot to add all that liquid.
Used brown rice to empty my pantry a little. Still a more nuttier flavor than white rice.

OH, added 3 stalks of broccoli. The stalk, not the flower portion. Peeled and cut it thin. I had the flower portion in a previous recipe.
This is a 5-star recipe if not for the uncertainty.
It still serves plenty either way it's processed.
Found this recipe doing an ingredient search for potatoes, carrots and chicken.
Don't believe I've done a curry recipe before. I was afeared it might be too hot but was worried about nothing.

This sure looks good! Good call using the stalks of the broccoli, I use them as well..they are good and good for you:) I love chicken curry but don't make it often since my DH doesn't like curry..I may have to give this a try:) Love the pic!

My chicken breasts were monsters. Used two of them at just under 3lbs. Boneless, skinless, with rib meat.

This does look good! I think this would be a meal in itself without the rice. Bookmarked!

Wouldn't mind making this again and cutting the liquid in half, to make it thick like stew added to top some rice or mashed potato.
