Lemon Jelly Cake

- 1/2 cup butter, room temperature shopping list
- 1 cup sugar shopping list
- 2 eggs, well beaten shopping list
- 1 1/2 cups all purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/8 teaspoon salt shopping list
- 1/3 cup milk shopping list
- 1/2 teaspoon vanilla shopping list
- powdered sugar for garnish shopping list
For the Filling
- juice and zest of 2 lemons shopping list
- 1 cup sugar shopping list
- 2 tablespoons butter shopping list
- 4 egg yolks, well beaten shopping list
How to make it
- Preheat oven to 350 degrees F
- Spray 2 (9in) cake pans
- In mixer bowl, place the dry ingredients (sugar, flour, baking powder, salt)
- Add the butter, milk, and vanilla and mix for 2 minutes
- Scrape down the sides and gradually add the eggs, beating well
- Divide into the prepared pans and bake for 25-30 minutes
- Cool and frost with the Filling
For the Filling
- Combine the filling ingredients in a double boiler over a medium heat and stir constantly till smooth and slightly thickened
- Cool approx 15 minutes in the fridge before spreading on top and among the layers
- Sprinkle with powdered sugar
