Roasted Pear Salad

- 2 med pears,halved and cored shopping list
- 4 tsp olive oil shopping list
- 2 TB cider vinegar shopping list
- 1 tsp water shopping list
- 1 tsp honey shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp white pepper shopping list
- 1 pkg. (10 oz) mixed baby salad greens shopping list
- 1 c watercress sprigs shopping list
How to make it
- In small bowl,toss pears with 1 tsp oil. Place on 15x10" jelly roll pan,coated with spray.Roast at 400' for 10 mins. Turn pears and roast 5-7 mins longer or till golden and tender.
- When cool enough to handle,peel pears. Thinly slice 2 pear halves lengthwise and set aside.Place remaining pear halves in blender. Add vinegar,water,honey,salt and white pepper;cover and process till smooth. While processing,gradually add remaining oil in steady stream.
- In large bowl,toss salad greens,watercress,hazelnuts and cranberries. Arrange reserved pear slices on top;drizzle with dressing.
