How to make it

  • In small bowl,toss pears with 1 tsp oil. Place on 15x10" jelly roll pan,coated with spray.Roast at 400' for 10 mins. Turn pears and roast 5-7 mins longer or till golden and tender.
  • When cool enough to handle,peel pears. Thinly slice 2 pear halves lengthwise and set aside.Place remaining pear halves in blender. Add vinegar,water,honey,salt and white pepper;cover and process till smooth. While processing,gradually add remaining oil in steady stream.
  • In large bowl,toss salad greens,watercress,hazelnuts and cranberries. Arrange reserved pear slices on top;drizzle with dressing.

    This is a wonderful salad. I have made one very much like this for years, the only real difference is I cany some nuts, any kind but peanuts in the oven and add to the salad.
