My Aunt's Rhubarb Pudding

- 4 cups rhubarb, chopped into 1/2" pieces shopping list
- 1 cup sugar shopping list
- 1 cup miniature marshmallows shopping list
- Batter~~~~~~~~ shopping list
- 1 1/4 cups flour (I used unbleached) shopping list
- 1 1/4 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 3/4 cup sugar shopping list
- 1/2 cup milk shopping list
- 4 Tablespoons butter, melted shopping list
- 1 egg, beaten shopping list
- 1 tsp vanilla shopping list
How to make it
- Preheat oven to 350°.
- Mix rhubarb, sugar and marshmallows, stirring until the sugar "disappears". Pour into an 11 X 7 baking dish and evenly distribute.
- Mix together the batter ingredients and pour/spread over rhubarb.
- Bake for 40 minutes until golden brown.
