For the Sauce
- 1/2 c chicken broth shopping list
- 3 T Tamarind or soy sauce shopping list
- 1 T fish sauce shopping list
- 1T brown sugar shopping list
- 1 T chile paste with garlic shopping list
- 1 T lime juice (I use 2 T) shopping list
- 1 clove of garlic shopping list
For the Stir fry
- 8 oz rice noddles (Pad Thai) cooked according to package and drained shopping list
- 2 eggs, beaten shopping list
- 2 cups fresh bean sprouts (Mung) shopping list
- 1 c onion, sliced thin shopping list
- 4 green onions, sliced thin shopping list
- 1 jalapeno, seeded and sliced very thin shopping list
- 1 c grated carrot shopping list
- 1/4 crushed peanuts shopping list
- 1/3 c chopped cilantro shopping list
- 2 T oil shopping list
- Optional - 4 oz cooked chicken, shrimp, or pork, sliced thin shopping list
How to make it
- Mix the ingredients for the sauce together and set aside
- Heat 1 T of the oil over medium heat in a wok
- Add the egg and scramble until soft, Remove from the work
- Add the second T of oil and heat over high heat
- Add the onions, green onions, carrots, bean sprouts and jalapeno
- Stir fry until cooked but still crispy
- Add egg (and optional meat)
- Stir fry another minute
- Add the cooked rice noodles, stir fry until hot
- Pour in the sauce and mix until well coated.
- Top with cilantro and crushed peanuts
- Serve immediately with Sriracha sauce on the side.
