From charlestonchefdave 13 years agoIngredients
- 3 eggs - Room Temp VERY IMPORTANT shopping list
- 1 Cup of milk - Room Temp VERY IMPORTANT shopping list
- 1 Cup of All Purpose flour shopping list
- 1/2 cup of shortening or Fat drippings shopping list
- 1 teaspoon of salt (optional, I don't add the salt) shopping list
How to make it
- Measure out Milk and set aside for at least 30 minutes
- Remove Eggs from Refridgerator for at least 30 minutes
- Pre-Heat Oven to 450 Degrees
- Make sure everything is room temperature, this is a critical step.
- Combine all Ingredients and whisk together till a medium thin batter is achieved
- Coat a 9x12 Muffin or Baking pan with Shortening or Fat Drippings
- Place pan in the oven for appx 3-5 minutes or until shortening or fat is liquified and hot (it should be smoking just slightly)
- Pour batter into muffin pan (about a 1/4" of batter) in each
- Immediately place in oven and shut the door
- Bake for 12-15 minutes or until these little beauties rise way up
- NOTE- no matter what you do, don't open the oven door till they are golden brown and risen. If you open the oven door they will deflate! If you have a window and a light on your oven it will come in handy with this dish.
- Have everything ready to go and server immediately, cover with gravy and enjoy!
