Roast Lamb For One

- 1 lamb shank shopping list
- 1 sprig fresh rosemary shopping list
- 1 garlic clove,bruised shopping list
- 1/2 lemon,juiced and zested shopping list
- 2 TB red port wine shopping list
- 1/2 tsp olive oil shopping list
- 1 tsp kosher salt shopping list
- fresh ground black pepper shopping list
- 1/2 tsp red current jelly shopping list
How to make it
- Put everything ,other than jelly , together into a freezer bag,tie securely,and leave in refrigerator overnight.
- Preheat oven to 400'
- Take lamb out of frig to come to room temperature.
- Put lamb shank along with it's marinade into a roasting pan and cook 1 to 1-1/2 hours,depending on the size of the shank. Turn the shank over halfway through cooking. By the time it is done,it should look bursting with bronze color;remove from pan and let stand 5 to 10 mins before serving.
- While it is resting,put roasting pan on stove and stir in a little water and 1/2 tsp red current jelly to make a light gravy. Slice lamb and drizzle with gravy.
