Italian Bean Soup

- 1 med. onion,thinly sliced shopping list
- 1 small potato,peeled and finely chopped shopping list
- 1 celery rib,chopped shopping list
- 3 garlic cloves,minced shopping list
- 2 TB olive oil shopping list
- 3 cans (14-1/2 oz ea.)chicken broth shopping list
- 1 can (15 oz) cannellini or white kidney beans shopping list
- 1 can (14-1/2 oz) Italian stewed tomatoes,undrained shopping list
- 1/4 c fresh ,minced parsley shopping list
- 1 TB prepared pesto shopping list
- 1/4 c uncooked orzo pasta shopping list
- 1 c fresh baby spinach shopping list
- 1/4 c grated romano cheese shopping list
How to make it
- In Dutch oven, saute onion,potato,celery and garlic in oil until tender. Stir in broth,beans,tomatoes,parsley and pesto. Bring to boil. Stir in pasta. Reduce heat;cover and simmer 10-15 mins. or till pasta is tender.
- Add spinach and cook just till wilted. Sprinkle each serving with cheese.
