Rich chewy chocolate cookies with no added fat or flour. Made with cocoa powder and egg whites. Makes BIG cookies!!

Ingredients
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup brown sugar, packed
  • 1/2 cup confectioner's sugar
  • pinch salt
  • 1 tbsp vanilla extract
  • 4 large egg whites

Directions
  1. Preheat oven to 350F
  2. Whisk dry ingredients.
  3. With an electric mixer, combine vanilla and egg whites until very foamy.
  4. Add egg whites to cocoa mixture and beat with the mixer about 3 minutes, until glossy and well combined.
  5. Drop onto greased (or paper-lined) cookie sheets about 3 inches apart.
  6. Place in oven, reduce temperature to 325F.
  7. Bake 15-17 minutes, or until cracks begin to appear in the tops of the cookies.
  8. Cool completely on sheet.

I just made these, they were very easy and SOOO good, I definitely needed some kind of milk afterwards to counteract the richness!! I think they would be really good with coffee, has anyone tried it?
