Okonomiyaki Or Japanese Cabbage Pizza

- 2 cups cabbage, shredded shopping list
- 3 eggs shopping list
- 2/3 cup all purpose flour shopping list
- 1/2 cup water shopping list
- 2 tsp. chopped pickled ginger (fresh ginger can be substituted) shopping list
- 2 tsp. dehydrated tiny shrimp, rehydrated in a bit of water and drained (optional) shopping list
- 3-4 scallions, chopped shopping list
- handful bonito flakes (optional) shopping list
- mayo for drizzling shopping list
- soy sauce for drizzling shopping list
- canola oil for frying shopping list
How to make it
- Whisk together the eggs and flour. Add water until you achieve the consistency of a thick cake batter.
- Add cabbage, ginger, shrimp, half the scallions and mix well. You may need to add a bit more water at this point.
- Heat a tbs. of oil in a nonstick pan over medium heat. When it's hot, add half the batter and spread into an even layer.
- Let the pancake cook for about half a minute; then reduce heat to medium low, cover and cook for about 5 minutes. Keep an eye on the heat; you may need to reduce it slightly to prevent the pancake from browning too quickly.
- When the underside is a light golden brown, flip the pancake and continue to cook, covered for about four minutes.
- Remove from the pan and keep warm. Repeat with remaining batter.
- Drizzle the pancakes lightly with mayo and soy and top with bonito flakes and remaining scallions. Cut into four wedges and serve.
