How to make it

  • Whisk together the eggs and flour. Add water until you achieve the consistency of a thick cake batter.
  • Add cabbage, ginger, shrimp, half the scallions and mix well. You may need to add a bit more water at this point.
  • Heat a tbs. of oil in a nonstick pan over medium heat. When it's hot, add half the batter and spread into an even layer.
  • Let the pancake cook for about half a minute; then reduce heat to medium low, cover and cook for about 5 minutes. Keep an eye on the heat; you may need to reduce it slightly to prevent the pancake from browning too quickly.
  • When the underside is a light golden brown, flip the pancake and continue to cook, covered for about four minutes.
  • Remove from the pan and keep warm. Repeat with remaining batter.
  • Drizzle the pancakes lightly with mayo and soy and top with bonito flakes and remaining scallions. Cut into four wedges and serve.
