Swiss Florentine Frittata

- 2 fried slices bacon, 40% Less Fat Center Cut shopping list
- 6 egg shopping list
- 1/4 cup green onions shopping list
- 1/2 cup Daisy sour cream shopping list
- 1/2 cup Fat Free skim milk shopping list
- 2 oz swiss cheese shopping list
- 2 cups Fresh baby spinach shopping list
- 1/2 tsp cayenne pepper shopping list
- 1 tsp oregano, Dried shopping list
- 1 tsp ground black pepper shopping list
- 1 tsp salt shopping list
How to make it
- Preheat oven to 450
- Fry bacon and set aside to drain.
- Thinly slice the green onion and roughly chop the spinach.
- In the same pan with the bacon drippings, saute the green onion. Remove the onion to cool.
- Whisk the egg, sour cream, milk, cayenne, oregano, salt, pepper, sauteed onion and spinach.
- Using the same bacon pan, reduce heat to medium low (3 on my stove) and pour in egg mixture.
- Dice cream cheese into cubes, small dice the swiss cheese, chop bacon and distribute all on top of cooking egg mixture.
- Let egg cook on stove top until almost set then place in the oven to finish off See Photo. It will stay in the oven until it bubbles up, browns and is nicely firm.
