How to make it

  • Combine flours, oats, wheat germ, salt, soda and baking powder and set aside.
  • In electric or stand mixer, combine honey, sugar and butter and mix well.
  • Add egg and beat well.
  • Add vanilla, OJ and zest and mix to combine.
  • Add dry ingredients alternately with sour cream, mixing well, but not beating, until all incorporated.
  • Fold in remaining ingredients.
  • Spoon into greased or papered muffin tins. Fill nearly to the top to achieve beautiful, full muffins.
  • Bake at 350 for 17-20 minutes until toothpick JUST comes out clean. DO NOT OVER BAKE
  • Let cool slightly then remove and serve or pack to take or wrap well and freeze. :)

    Awesome! This is my kind of muffin. I make muffins 1-2 times a week for the kids after school snack or lunchbox and I like to pack it full of nutrition and fibre filling stuff. I'm always trying different recipes so the kids do not get tired of muffins. I used dried cranberries and sultana raisons. I didn't have any nuts, but after eating this it would taste great with walnuts or pecans. I also used ground flax seeds for the wheat germ. They remind me of a banana bread mixed with a carrot cake, yum!
