Hit The Trail Muffins

- 1 cup all purpose flour shopping list
- 1/2 cup whole wheat flour shopping list
- 3/4 cup oats shopping list
- 1/4 cup wheat germ(optional) shopping list
- 1/2t salt shopping list
- 1/2t baking soda shopping list
- 2t baking powder shopping list
- 1/3 cup honey shopping list
- 2T brown sugar shopping list
- 1/4 cup butter, softened or melted, and cooled shopping list
- 1 egg shopping list
- 1t vanilla shopping list
- 2T fresh orange juice shopping list
- zest from 1 small orange shopping list
- 1 cup sour cream or yogurt shopping list
- 1 large ripe banana, mashed shopping list
- 1 small carrot, grated shopping list
- 1/4 cup shredded coconut(I used unsweetened) shopping list
- 1/4 cup chopped nuts shopping list
- 1/4 cup dried fruit(I used dried berry mix) shopping list
- 1/4 cup mini chocolate chips shopping list
How to make it
- Combine flours, oats, wheat germ, salt, soda and baking powder and set aside.
- In electric or stand mixer, combine honey, sugar and butter and mix well.
- Add egg and beat well.
- Add vanilla, OJ and zest and mix to combine.
- Add dry ingredients alternately with sour cream, mixing well, but not beating, until all incorporated.
- Fold in remaining ingredients.
- Spoon into greased or papered muffin tins. Fill nearly to the top to achieve beautiful, full muffins.
- Bake at 350 for 17-20 minutes until toothpick JUST comes out clean. DO NOT OVER BAKE
- Let cool slightly then remove and serve or pack to take or wrap well and freeze. :)

Awesome! This is my kind of muffin. I make muffins 1-2 times a week for the kids after school snack or lunchbox and I like to pack it full of nutrition and fibre filling stuff. I'm always trying different recipes so the kids do not get tired of muffi...more
