Thanksgiving Stuffed Peppers

- 2 cups cooked turkey meat, chopped shopping list
- 2 cups bread stuffing (Not posting my recipe for this one, since everyone has their own way of doing it) shopping list
- 1 cup cooked butternut squash shopping list
- 4 large yellow or orange bell peppers shopping list
- 1/2 medium sized onion, diced shopping list
- 1/2 cup chopped portabella mushroom shopping list
- 1 T parsley shopping list
- 1 tsp thyme shopping list
- 1 tsp ground sage shopping list
- 1 cup chicken stock shopping list
- 1/2 tsp cayenne pepper shopping list
- S&P to taste shopping list
How to make it
- Preheat oven to 350
- Open the tops of the bell peppers, and clean out the insides
- In a large pot, bring water to a boil and add the peppers, and turn them occasionally over ten minutes or so
- Remove from heat, and rinse with cold water to stop them from cooking
- In a large bowl, combine all the other ingredients and mix thoroughly
- Generously stuff the peppers and place in a shallow baking pan with about 1/4 inch of water in it
- Bake at 350 for 45 minutes
- In a sauce pan, heat cranberry sauce on medium low, and bring to a slow boil.
- Serve Peppers with hot cranberry sauce on top
- A nice turkey gravy adds depth to the flavor as well
