Chipotle Pork Tacos

- 1 (1lb) pork tenderloin,trimmed shopping list
- 1-1/2 tsp finely grated lime rind shopping list
- 1 TB fresh lime juice shopping list
- 2 tsp minced fresh oregano shopping list
- 1 tsp brown sugar shopping list
- 2 tsp chopped chipotle chili in adobo sauce shopping list
- 2 tsp bottled minced garlic shopping list
- 1/4 tsp salt shopping list
- cooking spray shopping list
- 1 c thinly sliced shallots shopping list
- 2 tsp olive oil shopping list
- 8 (6") corn tortillas shopping list
- 1/4 c reduced-fat sour cream shopping list
- chopped cilantro shopping list
How to make it
- Place pork tenderloin between 2 sheets of heavy-duty plastic wrap;pound to 1/4" thickness using meat mallet or small heavy skillet. Remove plastic wrap. Cit pork into thin strips. Combine pork,lime rind and next 6 ingredients (through salt)
- Heat large non-stick slillet over med-high heat. coat pan with cooking spray. Add shallots to pan;saute for 4 mins. or till tender. Place shallots in large bowl.
- Add oil to pan. Add pork;saute for 3 mins or till no longer pink. Add pork to shallots.
- Warm tortillas according to pkg. directions. Spon 1/3 c pork mixture onto each tortilla with 1-1/2 tsp sour cream and cilantro. Fold in half.
- I use flour tortillas because we prefer them..I slice avocado on mine also.
