River's Mac And Cheese Casserole

- 1 pound of your favourite pasta (I use generic-brand campanelle) shopping list
- 2 8-oz bags of your favourite shredded cheese (I use a blend of colby & monterey jack) shopping list
- 3 tbsp butter or margarine, or 2 tbsp olive oil (preference) shopping list
- 1 jar alfredo sauce of your choice (I usually use alfredo & mushroom or crushed red pepper alfredo... four cheese alfredo works too) shopping list
- 1/4 jar of spaghetti sauce (I use Bertolli garlic & olive oil) shopping list
- 1 package smoked sausage (Polska kielbasa works too) shopping list
How to make it
- -Pre-heat the oven to 400 degrees Fahrenheit.
- -Boil the pasta until tender.
- -Chop the sausage into half-bite-sized pieces and drop it into a hot skillet to fry. (I usually do this while the pasta is boiling!)
- -Fry the sausage on medium-high until it is lightly browned. Set aside.
- -Mix the alfredo sauce with the spaghetti sauce until completely blended (it will come out pinkish orangeish). You can add a dash of garlic if you like. Set aside.
- -Drain your pasta thoroughly, and then put it back in the pot that you cooked it in.
- -Mix the butter/margarine or olive oil with the pasta until it is completely melted and absorbed into the pasta... this will keep the pasta from sticking together and also make sure your sauce doesn't stick to the pot.
- -Add the sauce to the pasta and mix well.
- -Add half of a bag of cheese to the pasta and mix some more.
- -Add the sausage to the pasta and sauce mixture and mix yet again.
- -Now add the other half of that bag of cheese and mix a little more.
- -This combination of cheese, pasta, sauce, and sausage is the body of your casserole.
- -Put half of your pasta mix into a 9x13 (inch) glass pan or casserole dish. (Feel free to use a metal one, but make sure to grease it first and I have no idea how long it would cook in metal...)
- -Layer half of the other bag of cheese on top of the pasta mix.
- -Add the rest of the pasta mix on top.
- -Add the rest of the cheese on top of that, and make sure that the top is completely covered in cheese, otherwise you will end up with crispy noodles!
- -Bake at 400 degrees (F) for 15 - 20 minutes. When it's done, the cheese in the middle will be all melty and the outer edges will be golden brown.
