How to make it

  • Chop the dates and apricots into small pieces
  • Place them in a bowl with the orange juice and place in the fridge (the longer you leave it the better, but no less than 4 hours, preferably overnight) - add a splash of Angostura bitters if you like, this adds a lovely flavour
  • Grease a regular baking tin with a splash of sunfower oil
  • Preheat the oven to 100C (210F)
  • Mix the flour well into the fruit mixture
  • Spoon the mixture in to the baking tin
  • Bake for 90 minutes or until a toothpick stuck in the centre comes out clean
  • Serve immediately or cold or toasted, as you like
  • Enjoy and feel free to try it with other fruits and even with apple juice.
