Dairy And Sugar Free Organic Fruitcake

- 1 cup organic pitted dates (not dried) shopping list
- .5 cup organic dried apricots shopping list
- 1.5 cup organic self raising flour shopping list
- 0.4 l organic fresh orange juice (with bits) shopping list
- Angostura bitters (optional) shopping list
- sunflower oil shopping list
How to make it
- Chop the dates and apricots into small pieces
- Place them in a bowl with the orange juice and place in the fridge (the longer you leave it the better, but no less than 4 hours, preferably overnight) - add a splash of Angostura bitters if you like, this adds a lovely flavour
- Grease a regular baking tin with a splash of sunfower oil
- Preheat the oven to 100C (210F)
- Mix the flour well into the fruit mixture
- Spoon the mixture in to the baking tin
- Bake for 90 minutes or until a toothpick stuck in the centre comes out clean
- Serve immediately or cold or toasted, as you like
- Enjoy and feel free to try it with other fruits and even with apple juice.
