How to make it

  • In medium sauce pan, over medium or medium low heat, melt together butter, sugar and honey, stirring to break up any lumps and keep mixed while heating.
  • Bring to a boil, then stop stirring. Let cook at a good boil for about 8 minutes, then stir.
  • Color should have changed, slightly. Stir to even out the color then cook about 2 more minutes.
  • Add nuts, stir them in, and continue to heat for another minute.
  • Turn off heat but do not remove pan from stove and immediately add cranberries and vanilla, stirring quickly to combine.
  • Add baking soda and stir quickly just to combine.
  • Immediately pour onto parchment paper over cookie sheet(I sprayed my paper, even, for good measure :) and spread out as thin as you can. Ideally, it will only be as thick as the larger nut pieces, but it can be tough to work fast enough to achieve that. Just do the best you can.
  • Sprinkle with sea salt flakes.
  • Let cool at room temp for a couple hours, then break into pieces.
