- 8--10oz package lady fingers shopping list
- 1 cup fresh lemon and/or lime juice(I used both) shopping list
- 3T honey shopping list
- 1/2 cup your favorite rum shopping list
- 2t vanilla, divided shopping list
- 16oz cream cheese, softened shopping list
- 1/2 cup powdered sugar shopping list
- zest from 2 limes and 1 lemon shopping list
- about 2T half and half shopping list
- 1 1/2pts fresh blueberries shopping list
- 1/3 cup pure pomegranate juice(or, can sub grenadine, but it will be sweeter :) shopping list
- Raw or vanilla sugar to sprinkle on the top OR shaved white chocolate shopping list
How to make it
- In small saucepan, heat citrus juices, honey, rum and 1t vanilla to boiling, then lower heat and simmer about 5 minutes.
- Remove from heat and let cool a few minutes(until it's cool enough to handle)
- Meanwhile, combine cream cheese, powdered sugar, 1t vanilla, and zest.
- Add half and half until a spreadable, but creamy consistency is achieved.
- Dip both sides of each lady finger, one at at time and quickly, into syrup and make a single layer of them in the bottom of a 9X13 glass baking dish. Break any fingers that need broken to fit. ;)
- Spread with half of the cream cheese mixture See Photo. Don't worry about covering all the fingers on this layer...make sure to leave yourself enough for the top!
- Top with blueberries then sprinkle with vanilla sugar or white chocolate, if using
- Repeat another layer of fingers the same as the first, BUT, before adding the cream cheese mixture, slowly drizzle the pomegranate juice over the two layers that are already in the dish. See Photo
- Now add another layer of the cream cheese mixture, covering the fingers as much as you can.
- Add rest of the blueberries, then sprinkle with more sugar or chocolate.
- Let rest at least an hour, 4 or so is better. :)
