How to make it

  • Prepare pizza dough as directed.
  • Roasted Garlic Cream Sauce:
  • Preheat oven to 400°F . Cut a sliver off of the top of the entire garlic head so that you cut through the tips of each garlic clove. Place cut side up on a piece of foil, drizzle with olive oil and wrap the foil around to seal. Roast in the oven for about 30 minutes. When cooled enough to touch, squeeze the roasted garlic out. Mash with a fork into a paste.
  • In a small saucepan, add the roasted garlic and whisk in the cream, bring to a boil then simmer to slightly reduce the cream. Take off heat and whisk in enough cheese to thicken up the sauce. Season to taste.
  • After sauce has cooled, place in fridge. This will thicken the sauce further so ti can be spread on your dough.
  • *Caramelized Onions:
  • On med-high heat, add a little olive oil to a nonstick saute pan. Add the onions and saute a few minutes until they start to slightly soften. Add a splash of balsamic vinegar, salt and sugar to taste. Reduce heat to med-low and let cook for 20 minutes, stirring every few minutes.
  • Assembly:
  • Roll out pizza crust (you can divide dough for two medium pizzas to make super thin crust or make one large regular crust). Spread with roasted garlic sauce (you may have some left over). Place mozzarella on top of sauce, then spinach, mushrooms and caramelized onion. Finish with crumbled goat cheese.
  • Place pizza on a round nonstick pizza pan and bake at 400°F for 10-12 minutes or until cheese is bubbling and golden brown.
