Poor Mans Pecan Pie Recipe
No pecans needed for this pseudo-pecan pie! It'll amaze you and it's easy to make.

Ingredients
  • 3 eggs
  • 3/4 cup sugar
  • 1 cup old fashioned oats
  • 3/4 cup dark corn syrup
  • 1/2 cup flaked coconut
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1-9 inch unbaked pie shell
  • Whipped topping

Directions
  1. In a bowl, mix together eggs, sugar, oats, corn syrup, coconut, melted butter and vanilla.
  2. Pour into pie shell.
  3. Bake at 375 degrees for 15 minutes.
  4. Reduce heat to 350 degrees
  5. Bake another 30-35 minutes or until toothpick inserted in the center comes out clean.
  6. Serve with whipped topping

I have never omitted the coconut. I think it's one of the reasons it ends up tasting like pecan pie :)


This was really good. My lunch guests absolutely loved it and ate every last drop!
