How to make it

  • Blend crepe ingredients in a blender or food processor for 5 seconds.
  • Scrape down sides and blend the batter for 20 seconds longer.
  • Cover and let stand at least 30 minutes.
  • Heat 8-inch nonstick skillet over medium heat.
  • Brush with melted butter then stir batter.
  • Pour 3 tablespoons butter into pan and quickly tip to coat bottom.
  • Cook until bottom is slightly browned, about 45 seconds.
  • Turn crepe with spatula and cook 20 seconds longer.
  • Transfer to a plate then repeat with remaining batter.
  • Brush pan with a little melted butter before cooking each crepe.
  • FILLING:
  • Reserve 1/2 cup cheddar cheese.
  • Combine remaining ingredients then place 1/2 cup into each crepe.
  • Roll up then place seam side down in greased baking dish.
  • Pour tomato sauce on top then sprinkle with reserved cheese.
  • Bake at 375 for 25 minutes.

    Which ingredients are going into the blender, & which ingredients are comprising the filling? Which of the cheeses sre you reserving a 1/2 cup of?
