Spinach Crepes Recipe

This is a recipe I obtained from my catering friend a few years ago. He serves these quite often and always gets rave review.

Ingredients
- Crepes:
- 3 eggs
- 1 cup Milk
- 1 tablespoon melted butter
- 3/4 cup all purpose flour
- 1/4 teaspoon salt
- Filling:
- 2 cups shredded swiss cheese divided
- 2 cups cottage cheese
- 1/4 cup Grated Parmesan cheese
- 1 egg slightly beaten
- 10 ounce package frozen chopped spinach squeezed dry
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1-1/2 cups tomato sauce
Directions
- Blend crepe ingredients in a blender or food processor for 5 seconds.
- Scrape down sides and blend the batter for 20 seconds longer.
- Cover and let stand at least 30 minutes.
- Heat 8-inch nonstick skillet over medium heat.
- Brush with melted butter then stir batter.
- Pour 3 tablespoons butter into pan and quickly tip to coat bottom.
- Cook until bottom is slightly browned, about 45 seconds.
- Turn crepe with spatula and cook 20 seconds longer.
- Transfer to a plate then repeat with remaining batter.
- Brush pan with a little melted butter before cooking each crepe.
- FILLING:
- Reserve 1/2 cup cheddar cheese.
- Combine remaining ingredients then place 1/2 cup into each crepe.
- Roll up then place seam side down in greased baking dish.
- Pour tomato sauce on top then sprinkle with reserved cheese.
- Bake at 375 for 25 minutes.

Which ingredients are going into the blender, & which ingredients are comprising the filling? Which of the cheeses sre you reserving a 1/2 cup of?
