Mushroom And Bacon Omelet With Buttery Herbed Grape Tomatoes

- 2 slices bacon, crumbled shopping list
- 4-5 white button mushrooms, sliced shopping list
- 2 eggs, beaten shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- SAUCE: shopping list
- 1 tablespoon butter or margarine shopping list
- 10-12 grape tomatoes, halved or chopped shopping list
- fresh parsley, basil, oregano, chives to taste shopping list
- 1 garlic clove, minced shopping list
- salt and pepper to taste shopping list
How to make it
- Fry bacon, remove from pan and drain on paper towels. Set aside.
- While bacon is frying, make the sauce. Melt butter in saucepan and add remaining ingredients. Simmer while completing the omelet.
- In the same skillet, (with bacon drippings), saute sliced mushrooms. Return crumbled bacon and pour in eggs (seasoned with salt and pepper). Cook slowly until eggs are set.
- Fold or roll into omelet shape, transfer to serving plate and top with tomato sauce. Garnish with additional fresh herbs.
