How to make it

  • Fry bacon, remove from pan and drain on paper towels. Set aside.
  • While bacon is frying, make the sauce. Melt butter in saucepan and add remaining ingredients. Simmer while completing the omelet.
  • In the same skillet, (with bacon drippings), saute sliced mushrooms. Return crumbled bacon and pour in eggs (seasoned with salt and pepper). Cook slowly until eggs are set.
  • Fold or roll into omelet shape, transfer to serving plate and top with tomato sauce. Garnish with additional fresh herbs.
