How to make it

  • Preheat grill
  • Scrub potatoes, and slice in fairly thin rounds (not as thin as if you were making chips), into mixing bowl' half or more filled with cold water
  • slice onion into thin rings and push apart
  • Drain water from potatoes
  • Add onion rings to potatoes in bowl
  • Whisk together all ingredients from smokey mesquite to garlic
  • Pour over onions and potatoes and toss until well coated
  • Make a large "T" with 2 long peices of foil. Dump the potato mixture into the mid-section. bring sides up, and roll down tightly. Wrap with another peice of foil to sela and prevent leaking.
  • Place packet on med heat on grill for 30 minutes
  • Turn over and cook another 30 minutes.
  • Cook about 10 minutes longer if you want them more charred and crispy.
  • Garnish with chives and bacon bits. Normally, I would chop some bacon and fry, then chop to garnish, but, I was out of "real" bacon! : )
