How to make it

  • Combine crust ingredients and press into a greased 9 x 13 pan. Bake at 350 for 10 minutes. Cool.
  • For filling: Combine sugar and flour. Stir in whipping cream and eggs then stir in rhubarb. Pour over crust and bake at 350 for 45-60 minutes or until custard is set. Cool.
  • For topping: Blend cream cheese, sugar & vanilla. Fold in whipped cream. Spread over custard and refrigerate overnight.
