Rhubarb Custard Bars

- Crust: shopping list
- 2 c. flour shopping list
- 1/4 c. sugar shopping list
- 1 c. cold margarine shopping list
- Filling: shopping list
- 2 c. sugar shopping list
- 7 Tbsp. flour shopping list
- 1 c. whipping cream shopping list
- 3 eggs, beaten shopping list
- 5 c. rhubarb pieces shopping list
- Topping: shopping list
- 2-3oz blocks cream cheese, softened shopping list
- 1/2 c. sugar shopping list
- 1/2 tsp. vanilla shopping list
- 1 c. whipping cream, whipped shopping list
How to make it
- Combine crust ingredients and press into a greased 9 x 13 pan. Bake at 350 for 10 minutes. Cool.
- For filling: Combine sugar and flour. Stir in whipping cream and eggs then stir in rhubarb. Pour over crust and bake at 350 for 45-60 minutes or until custard is set. Cool.
- For topping: Blend cream cheese, sugar & vanilla. Fold in whipped cream. Spread over custard and refrigerate overnight.
